Chicken Pasta with Spinach and Bacon Recipe

Dinner can be a crazy time in our house, but with three growing kids, its critical that the importance of a quality meal isn’t overlooked. I’m always looking for recipes that contain ingredients I know my boys will love. We cook a lot of chicken in our house and anything that combines pasta and a veggie with it, is usually a win.

Chicken Pasta with Spinach and Bacon Recipe

Last night we ventured on a new chicken breast recipe that has quickly become a family favorite. If you’re looking for something quick, easy, and tasty, this Chicken Pasta with Spinach and Bacon dish is for you! It combines chicken with spinach, tomatoes, and bacon to bring an ultimate delight to your pallet.

 

What you’ll need:

4 lbs Boneless skinless chicken breast
1 package Bacon (I prefer thick cut)
1/2 cup Garlic cloves minced
1 cup Diced tomatoes
1 bag Spinach
1/2 box Penne Pasta
1 cup Parmesean cheese
8 oz heavy cream (to save on calories you can substitute with evaporated skim milk)
salt & pepper
red pepper flakes (optional)

Directions

Sautee Chicken breast in olive oil until cooked thoroughly
Remove chicken from pan and set aside
Cook bacon until entire strip is crispy
While bacon is cooking, bring water to a boil in separate pot and cook penne
Drain ½ of bacon grease and discard
Add diced minced garlic, Tomatoes, spinach, salt & pepper, red pepper flakes to pan
Slowly add heavy cream (or evaporated skim milk), 1 cup pasta water, parmesan cheese
Simmer 5 minutes
Mix in penne pasta, chicken, & crumbled bacon
Top with parmesan cheese
